Menu Plan Monday 8/31

Here is what I hope to make this week. Occasionally things change. Last week I was supposed to make spaghetti and meatballs but my husband went fishing that afternoon so it turned into a "fend for yourself" night. It happens. No big deal. I've learned to be flexible.

Monday- Meatloaf and a veggie
Tuesday- Vodoo Pasta
Wednesday- BBQ Chicken
Thursday- Leftovers
Friday- Something with Alfredo sauce? (any ideas?)
Saturday- Slow Cooker Vegetable Beef Stew
Sunday- Leftovers

Yes, I know I have left overs on the list twice every week. Two reasons, the first is I always make more than we eat. Not sure why it happens but it does. The second reason is that if I don't have it on the list then we end up with a fridge full of leftovers that never gets eaten. Now if for some odd and strange reason the left overs are actually taken to work by my husband then I will add in an extra meal. That usually never happens. Last weeks trip to Walgreens

Last week I did my first coupon trip to Walgreens. I have been wanting to give it a try but have been nervous about it. Walgreens has great deals because of their "Register Rewards". It's a piece of paper that prints from their register for you to use on a future purchase. For example this week they have Men’s Zone 6 Blade Razor System for $3.99 and you get a "Register Reward" for $3.99 making it free.

So last week I bought:
2 Listerine Agent Cool Blue's on sale 2/$8. (receive $3 RR when you buy one)
1 BOGO coupon
1 Manufacturers coupon for $1.00 off
2 Walgreen's Children's Activity Booklet coupon for $1.00 off
I paid $1.00 for both of them and then recieved $3 in register rewards.

2 Children's Benadryl on sale for 4.99 (recieve $5 RR when you buy 2)
2 Manufacturer coupon for $1 off
2 Walgreen's Children's Activity book coupon for $1 off
Total out of pocket 6.00 and received $5 in register rewards.
Like paying .49 cents a piece

Total for the whole purchase was $7.00 and I received 8 dollars in RR's for next week. Now I can buy things with my register rewards and get more register rewards with those purchases!

My coupon binder

When I first started clipping coupons, I organized them in an accordion file. Turns out that 13 different files was not nearly enough and I spent way to long leafing through a pile of coupons. So I made my own coupon holder and filled it with something like 50 envelopes because I found that breaking it down that much worked much better for me! Well after a few months that wasn't enough either. Finally I had to break down and do the binder that I had heard so much about.

Here is a tour of my coupon binder. I have it broken down a lot. I am usually shopping with my toddler and my infant and don't have the time to stand in the aisle looking thought all of the cleaning coupons. Not to mention the fact that the longer I stand there, the more likely it is that my toddler will attempt to pull something off the shelf. Of course, it will fall and I will be yelling "clean up on aisle 6". And my luck is that he will break something that I don't have a coupon for and will have to pay full price for something I don't even like, such as a fancy jar of anchovies! So speed is essential in our shopping. In order to make things go faster I have all of my categories broken down into sub categories. Read on for more info about that.

So here is the binder I picked up at Wal-mart during a back-to-school sale. I also got a small pair of scissors, dividers, page protectors, and baseball card inserts (up at the front by the poke-mon cards) while I was at it.

In the front pocket I have my large coupons and the coupons that are for $ off $$ coupons ($10/$50).

Chicken Tetrazzini review and recipe

I made some delicious Chicken Tetrazzini tonight for dinner. MMM MMM it was delicious. I used a combo of two recipes. When I was very new to cooking meals for my family, I followed recipes exactly as they were stated. I meausred eerything precisely and used every single ingredient. Now, I'll mix recipes together and put in a little of this and a little of that. (See Mom I'm getting braver in the kitchen!) Well tonigh was a great mix! Here is the recipe I used and how I made it!

1 carrot grated
chicken breasts cubed
your favorite chicken seasoning (I used Kickin Chicken from Weber)
Wacky Mac
1 can of cream of mushroom soup
1 Tbs oil
Chopped onion or some onion powder (maybe 2 teaspoons)
1/2 cup milk
1 Tbs parmesan cheese
1/4 cup sour cream
Boil water and cook pasta according to package directions.

Cook chicken in oil or butter until cooked through. Season liberally with your favorite seasoning. Once the chicken is cooked remove it from pan onto a plate and set aside. Add soup, sour cream, onion or powder, parmesean cheese, and milk to pan and heat through. Add chicken and cook until warm and bubbly. Let stand a few minutes.
Drain pasta and top with sauce. 
I would have taken apicture but it went quickly.

My trip to Harris Teeter

Here is my steal of the week from Harris Teeter. Normally it would be much more, but I'm quite disappointed by the sales this go around.

My total before coupons was 17.88
The total I paid was 1.24.

However, I don't believe that price is correct. The Sally Hansen Clear Coat was supposed to be $1.50, with my coupon it should have been free. So technically my total should just be .24 cents.

The most exciting thing in this picture is the AJAX. My husband is a mechanic and that soap is awesome when it comes to removing the grease!

Ham and Taters recipe

Ham and Taters in the slow cooker
3 cups diced extra-lean ham (I go to the deli and get them to slice it thick and then cube it myself)
6 1/2 cups thinly sliced potatoes
1 cup diced onion
1 1/2 cups shredded cheddar cheese
1 can (10 3/4 ounce) cream of celery soup
2 Tablesoppns half and half
1 teaspoon dried parsley flakes

Spray slow cooker container with butter-flavored cooking spray. Layer half of the ham, half of the potatoes, half of the onions, and half of the cheese in the prepared container. Repeat layers. In a small bowl, combine celery soup, half and half, and parsley flakes. Spoon mixture evenly over top of potato mixture. Cover and cook on LOW for 4 hours. Mix well before serving.

Super doubles at Harris Teeter

Harris teeter is doing a Super Doubles promotion this week.  That means that they will double all coupons with a face value up to $1.98. for example if you have a $1.50 coupon, it will double to $3.00. If you have a $1.99 coupon it will not double and will be taken at face value. The Super Doubles goes all week from 8/26 - 9/1.

Dolly Domestic has posted a spreadsheet of the good deals you can get at Harris Teeter this week. The prices are based on the Hanbury store in Chesapeake, VA. The prices that she has in parentheses are actually negative numbers, meaning that they cost you nothing!

I'm going to attempt to get out there today. My baby has a doctor's appointment which means shots so we will see how that goes first.

Apricot Chicken with rice

So simple to make!

1 Jar of Apricot Preserve
1 Bottle of Catalina Dressing
1 Envelope of Onion Soup Mix
4 Boneless Chicken Breast

Thaw your chicken. Preheat your oven to 350 degrees. Mix the Preserve, Dressing, and Onion Soup Mix in a 9x13in pan. Put your chicken in the mix and put it in the oven for 1 hour. Serve over white or brown rice.

Where to get Coupons?

Where do you get your coupons?
  • Sunday Paper- The Sunday paper is a great resource for coupons. If you really want to be able to save a lot, you will need more than one paper. I get my papers from the Dollar Tree. They sell them for $1, which is way cheaper than most places. (Here in Hampton Roads the Virginia Pilot is $2 most places. Gotta love Dollar Tree!)
  • Your Mailbox- In some areas of the country, the RedPlum insert comes in the mail instead of in the Sunday Paper. When you get that big pile of store flyers and ads, look through it for the RedPlum insert!
  • The Internet- There are website where you can print manufacturer's coupons. Some good ones are, SmartSource, and RedPlum. Also, manufacturer websites often have coupons available. If you like a product, call the company and let them know! Often they will reward you and send you coupons, sometimes for free products! 
  • Friends and Family- Not everyone uses coupons. Hit up your family to get their inserts. Also trading inserts works well to. Not everyone has a pet, but you might. Maybe you would like their pet coupons and they would like your hair color coupons? Share. Isn't that what we teach our kids? (I have 2 boys, I say that a million times a day too!)
  • Coupon Clipping services- Did you know you can buy coupons? Well, not really. You can't BUY coupons, but you can pay someone to clip them out for you and send them your way. Some of the more popular places to find them are and The Coupon Clippers.

SS: SmartSource- comes in the paper, usually on Sunday.
RP: Red Plum- may come in your paper, may come in your mailbox.
P&G: Proctor and Gamble- Usually comes in the Sunday paper and  the first weekend of the month.

$1/1, $1/2: One dollar off one item, one dollar off two items, etc.
2/$1, 3/$2: Two items for one dollar, three items for two dollars, etc.

Menu Plan Monday

I'm on week 3 of menu planning. So far, so good! I usually fall off the schedule and end up at 4pm in a panic with a hungry toddler and husband. Every week I asked my husband what he wants for dinner his week and his response is "food". Needless to say he isn't much help! So what do I make for a family of 2 adults, 1 toddler who throws his food, and 1 baby starting baby food?  Here is my plan. My name is Jaime. I am a stay at home mom to 2 little boys and a wife to one lucky man. I have a coupon for that! is a blog about saving money, time, and sanity. I also do product reviews and giveaways so that you don't waste your hard earned and saved money on something that won't work for your family. My job is save money and make my husbands pay check go further.

Another thing near and dear to my heart is something that has affected my entire family. In December 2009, my youngest son (9 months at the time) was diagnosed with a birth defect.  It is called Craniosynostosis. It is the premature fusing of the skull's sutures. His doctor had never heard of it before. It occurs in about 1 in 2000 births. If it was left untreated it could have led to restricted brain and skull growth causing a lot of problems for him. He under went a 5 hour surgery at 10 months old to correct it. 3 weeks later he started pulling himself up finally and couch cruising! It was very exciting for us! We are working to raise awareness. Many doctors and families have never heard of it and it often goes unnoticed and untreated. If you have any other questions feel free to email me.
